Turn your leftover pumpkin into a Spiced Pumpkin Martini!

Spiced Pumpkin Martini

Infused with the warm flavours of cinnamon, ginger, nutmeg and vanilla, this creamy cocktail captures the essence of autumn!

45 ml Aval Dor Vanilla Vodka
45 ml Cornish cream liqueur, plus more for spiced glass rim (optional)
1 tablespoon granulated sugar, for glass rim
1.5 teaspoons pumpkin spice (recipe below)
1.5 tablespoons pumpkin purée
2 tablespoons finely crushed biscuits for the glass rim

Method:

Combine the biscuits, sugar and half of the pumpkin spice into an even consistency. Pour a little Cornish Cream liqueur in a side dish. Wet the rim of your glass in the liqueur and gently roll it into the mixture, removing any excess. Place the glass in the freezer for a quick chill while you are making the cocktail. 

Add the Aval Dor Vanilla Vodka, Cornish cream liqueur, pumpkin purée and half of the pumpkin spice into a cocktail shaker with ice. 

Shake vigorously for at least 30 seconds. 

Strain cocktail into the chilled martini glass.  

Garnish with the cinnamon stick and serve.  

How to make your pumpkin spice

You can make your own pumpkin spice at home by combining:

2 x tablespoons of cinnamon
1 x tablespoon of ground ginger
1.5 teaspoons of ground nutmeg
0.5 teaspoon of ground cloves

It’s great for adding into cereal, cakes, pies, biscuits, syrups and coffee!
