Recipe: Cornish mussels with chorizo, & Rosemary Vodka

A taste of the Cornish coast…

Fresh mussels, smoky chorizo, and our Cornish Rosemary & Bay Vodka create a rich, flavorful meal perfect for a starter or a hearty main course. This recipe is a true homage to the coastal bounty, offering a delicious combination of briny, savory, and aromatic flavors.

Ingredients:

  • Thumb sized piece of leek

  • 3 spring onions

  • Thumb sized piece of chorizo

  • Salt & pepper (pinch)

  • 500g mussels

  • Handful chopped chives

  • 100ml passata

  • 50ml cream

  • 50ml water  

  • 50ml Cornish Rosemary & Bay Vodka

  • 2 tablespoons olive oil

    Method:

    In a large pan that has a lid, finely chop leeks into rounds, & spring onions into quarters, and fry in olive oil on a high heat.

    Chop the chorizo (similar size to the leek), and add this to the pan stirring to combine all & release some of the oils & flavour from the chorizo.  

    Add your mussels & gently season.

    Add all your liquids (passata, cream, water & vodka), and cook with a lid on for 3-4 mins until all shells have opened up – any that don’t open or are broken are no good so discard.

    Garnish with fresh chives & serve straight away.

    To bulk up add fries or crusty bread for a classic accompaniment.
